I am looking for a great gluten free bread mix or simple gluten free bread recipe to use. I have yet to find a bread that I love that will satisfy my sandwich cravings. Since Namaste’s pizza crust is pretty good, I thought I’d give their bread mix a try. I purchased this bread mix for $4.99 at my local grocery store and it makes one fairly large loaf of gluten free bread.
I mixed this gluten free bread mix with eggs, oil and water in my Kitchen-aid mixer and smoothed it in a bread pan with a spatula. I found the bread dough easy to handle and smooth in the pan- not too sticky . After baking, I let the bread cool completely and cut it with an electric bread knife. I was excited to see how easy the bread was to slice. I noticed very little crumbling or breakage. Plus, this bread seemed very soft and moist with a solid, crunchy crust. So far, so good.
I made a grilled chicken sandwich with tomato and lettuce, and was instantly disappointed. I found the bread to be almost too moist, because it tasted thick and mealy, and it stuck to the roof of my mouth, although the texture seemed fairly smooth with lots of nooks and crannies. The bread also turned mushy and could not support the chicken and tomato in my sandwich. How frustrating! On the bright side the flavor seemed very mild like a traditional white bread and would pair well with most spreads and sandwich ingredients. I also discovered that this bread mix tastes best the next day and was slightly better toasted.
